		<description>We mix up the cheeses pretty much every time we make it now.  Going beyond Kraft cheeses made a huge difference.  Pepperjack sounds like it would be really good.  Might have to try that.</description>

		<description>According to Cooks Illustrated (and I concur), a blend of two cheeses makes for a much smoother sauce (less grain).  I&#039;m partial to 50/50 combination of cheddar and pepper jack (monterey jack w/ jalapeños).  I&#039;ve included ham, but not bacon in baked M&amp;C; will attempt in the near future for great culinary success.</description>
