Tomatoes are ready to eat and Theresa just loves making bruschetta. We have some small and large tomatoes and dice them up. Add some fresh basil, parsley, shredded garlic, balsamic vinegar, and fresh shredded parm cheese. The toasty bits have some garlic and basil infused olive oil brushed on them as well as parm cheese. mmmmmmm………….
We are trying to eat a lot healthier and it took a while to try some new things. We do salads as sides and figured some seasoned potatoes would be a bit better than a baked potato or mashed with gravy.
Pretty simple to make. I cut some wedges and coat them with a clarified butter and oil mixture, some basil and parsley from the garden, salt, pepper, shredded garlic, and Cavanders greek seasoning. Put on a glove and mix it all up. Bake at 400 for about 25 minutes. They are really good. We like them to get a good browning, but you could prob foil pack them and grill too.
I have attempted some marinades before. Mostly just basil, parsley, oil, wine, garlic, salt and pepper. We tried some lemon chicken a few times but it gets too intense. For the heck of it we picked up a bottle of citrus peppercorn marinade and it was pretty good. I looked at the ingredients and saw vinegar in there. Kind of forgot about that.
So it was off to try and recreate the store bought stuff. I used an orange for the citrus thinking it might be a bit less powerful than lemon. A bit of the zest and juice with wine vinegar, olive oil, salt, pepper, and cayenne. It was not too bad, but the orange really stood out.
Anyone have any suggestions or ones they like. Mostly for chicken, maybe pork. I think our biggest problem is neither of us really think using mustard will be good. maybe just a touch.
That be my most firstest corn evar. We planted 9 corns, but one did not make it. Some baby ears are showing up and the pretty pink silk is making me all cited.

Theresa has been enjoying her cucumbers. She mixes in onions, salt, pepper, vinegar, and a bit of garlic to slices. Nummy.
Being our first garden experience we are having a bunch of fun. The peppers are hit and miss and not growing too big. The cucumbers are exploding as well as the tomaters. broccoli is a really huge plant. Finally got some green bunches a growing. And our herbs are doing pretty well in other areas and planters.
Since we started buying spices in bulk at open harvest, we have looked for good spice containers. We have bought jars and other things but none seem to work out as good as we hoped. Alton Brown uses metal canisters which he attaches them with velcro. We saw similar ones at BB&B and decided to go for it. Did an uber clean on the pantry and picked out our 10 favorite spices for the jars. I hope they are air tight enough.
